Winging has become hugely popular and has a pretty quick learning curve. Depending on your previous experience and level of skill, the size board you could ride varies hugely. Larger boards are great for learning on - you can just stand on them whilst you figure out the wing. Small boards require the right conditions, and great technique. Most people will ride something in the middle.
